  • 4 cups fresh blackberries 
  • 1/2 cup sugar
  • 2 egg room temperature
  • 1 egg yolk
  • 1/2 cup lemon juice
  • 1 cup unsalted butter cold
  • ½ teaspoon salt

Making Process

Step:1- Preheat the oven to 400°F.

Step:2- Mix together the flour, sugar and salt in a bowl. Make dough by mixing melted butter and almond extract.

Step:3- Spread dough evenly in a 9 inch tart pan and bake for 10-15 minutes.

Step:4- Mix sugar, eggs, egg yolks, salt and lemon juice together in a bowl. Do not add water. Keep stirring until the mixture thickens. This may take 10-15 minutes. The mixture should be very thick and look like curd. Sugar, yolk will be cooked and become grainy. Allow the mixture to cool.

Step:5- After the mixture has cooled, add 1 tablespoon of unsalted butter to the blender and blend well. Mix the mixture well after each addition. The cream will thicken and the mixture will start to take on a light yellow color.

Step:6- Once the cream is ready, pour the cream into the prepared shell. The mixture will spread evenly in the pan.
